Peach sponge cake recipe

Making this cake has no secrets and it is very easy to follow all the steps. It is a traditional yogurt cake, but in this case personalized with peach. A touch of sweetness, freshness and extra aroma that I'm sure almost everyone likes.
Necessary ingredients and utensils
To calculate the amounts of each ingredient, the measure of a common commercial yogurt is used. Generally, they are usually 125 grams. The following are the ingredients:
1 natural yogurt without added sugar.
3 glasses of flour.
3 medium eggs.
1 measure of extra virgin olive oil, much better if it has a mild flavor.
2 cups of sugar (it can be white or brown).
1 sachet of baking powder (or 16 grams).
2 large or 3 small peaches.
A few drops of vanilla essence.
In addition, you need a removable 22-centimeter mold, a mixer, a bowl, a sharp knife, a spatula and a fine strainer.
Steps to follow in the preparation of the peach cake
Before you start, turn on the oven and heat it to 180 degrees Celsius with heat up and down and no fan.
Wash, peel and remove the stones from the peaches. Cut half into small pieces and the other half into slightly thicker sheets to cover the bottom of the pan. Reserve.
The first step is pour the yogurt into a separate container so you can use the glass as a measurer.
In a bowl add the eggs and sugar, and beat with the help of the mixer. As soon as it takes on a whiter color and takes on a little volume, add the oil, the yogurt and the vanilla essence. Mix very gently until all the ingredients are integrated.
Later, sift the yeast and flour with the help of the strainer. Combine with the wet ingredients and with the help of the spatula make enveloping movements.
Then add the diced peach and mix to integrate into the dough.
Grease the bottom and sides of the pan with a little butter and flour. Cover the bottom with the reserved fruit slices and pour the dough on top.
Put in the oven and leave for about 40 minutes. The time may vary depending on the device and the mold used. To check the doneness, puncture in the center with a thin rod. If it comes out clean, you're done. Otherwise leave a few more minutes.
Let the cake cool and after about 10 minutes it can be removed from the mold. Put a plate under the cake and turn around with a firm and quick motion. Carefully remove the mold so that the peach layer does not break.
Customize and present the cake to your liking
The basic peach cake recipe admits some variations. So you can give it a personal touch or cook different versions at different times.
In order to obtain a uniform dough and with the peach well integrated it is advisable to cut it into very small pieces. You can leave them larger but in this case they have a tendency to go down towards the bottom of the cake.
There is the possibility of using another type of yogurt. The fruit ones enhance the flavor of the cake and with a Greek type a creamier dough is obtained. What's more a soy yogurt is an ideal choice for those who are lactose intolerant.
The aroma of the peach can be intensified by adding some spices such as cinnamon or cardamom. If you like citrus fruits more, grate a little lemon or orange peel when making the dough.
Presented as is, the peach cake is already a very appetizing sweet. But at the moment of serving it can be decorated with icing sugar sprinkled on top, a little chocolate syrup or even cover with a frosting of peach to present a more elaborate cake.
