The ingredients that will be necessary to make a good leek cake are the following (for 6 people):

  • 1 spring onion.

  • Wheat flour.
  • 2 cloves of garlic
  • 6 green asparagus
  • 300 milliliters of cream.
  • Extra virgin olive oil.
  • 150 grams of mushrooms.
  • 100 milliliters of white wine.
  • Seasonings: salt, pepper, nutmeg, parsley.

Step by Step

To achieve the recipe you have to start greasing a mold with a little oil and placing greaseproof paper on the surface, adding again some oil on top and a pinch of flour on the surface. Once this is done, the container will have to be reserved for later.

At this time the leeks will need to be cleaned and peeled. It is advisable to remove the first layer to avoid excessive bitterness. They are cut in half and finely chopped. The next step is to sauté them in a pan with oil and salt, until they begin to take color.

Then the lower part of the asparagus is cut and are chopped into relatively small pieces. They are added to the pot with the leeks.

Once the vegetables are well sautéed, they are drained and placed in the bowl of a shredder. Here the eggs, cream and a pinch of salt and pepper are added. Nutmeg is grated on top and everything is crushed until a dense and homogeneous mass is obtained.

When it is ready, it is introduced into the greased mold and it is baked in a water bath for 45 minutes at 180 degrees centigrade. Once the cooking process is finished, let it cool a bit and remove it from the mold.

In parallel, a sauce is prepared with the garlic and chives, finely chopped, which will be sautéed in a saucepan with oil. The sliced ​​mushrooms are added after 2 or 3 minutes of cooking.

After another 2 minutes, pour in the wine, reaching the boiling point, and cover with water. Everything is cooked for 15 minutes and crushed with the mixer afterwards.

From here it only remains to divide the cake into portions. It is served with the sauce and garnished with fresh parsley leaves.
