1. Vegetable lasagna with vegan bechamel

Ingredients for lasagna

  • Lasagne plates
  • Vegan grated cheese

For the filling

  • Mushrooms (300 g)
  • 1 eggplant
  • 1 zucchini
  • 2 onions
  • 1 small red pepper – medium
  • 2 cloves of garlic
  • Olive oil
  • Pepper
  • Salt

For the vegan bechamel:

  • 4 cups unsweetened vegetable milk (1 liter)
  • 5 tablespoons of flour
  • 1 tablespoon of vegetable butter
  • Nutmeg
  • Salt

Preparation of the bechamel

  • First, we add all the ingredients in a pot. If you want, you can sift the flour first to make sure that less lumps will appear.
  • Then, We bring to a boil and stir constantly to make sure the mixture is thick and homogeneous and without lumps.
  • Finally, we remove from the fire and reserve.

Of the filling

  • First of all, we wash and peel all the vegetables well. In addition, we cut them into small pieces.
  • Then, we toss in a frying pan a stream of olive oil and sauté all the vegetables adding pepper and salt to taste. We fry everything until it browns.

From the lasagna

  • Depending on the plates that we have bought, we must prepare them according to the instructions. Some need to be boiled, others soak, others can be put directly into the oven … Read the package instructions and prepare them.
  • Meanwhile, you can preheat the oven to 180 degrees.
  • When the plates are prepared, on a baking tray we will place a layer of lasagne plates and then, on top, a layer of filling.
  • Afterwards, we will repeat the same operation: a layer of lasagna plates and a filling plate.
  • Thus, we will continue until we have no more plates left.
  • Then, pour the béchamel over the last layer and, later, vegan cheese over the top.
  • Finally, we introduce the tray in the oven for about 15 minutes, until golden brown.

2. Vegetable lasagna

If you did not get your attention with bechamel, you can try this alternative where you will only use vegetables. It is very delicious and you can enjoy it both at lunch and at dinner.

Ingredients for lasagna

  • Lasagne plates
  • Grated vegan cheese

For the filling

  • Mushrooms (300 g)
  • 1 tomato jar for stir-fry
  • Spinach (200 g)
  • Olive oil
  • 1 red pepper
  • An eggplant
  • 1 zucchini
  • 1 onion
  • 2 cloves of garlic
  • Salt and pepper to taste

Instead of the traditional Bolognese sauce we can make a lasagna with only vegetable ingredients.


  • First, wash and peel the garlic, onion and pepper.
  • Then, we cut them very thin and add them to the pan with olive oil. Lightly fry and then add the tomato can and a pinch of salt. If you want, you can also add a pinch of sugar. We must prepare a sauce with these ingredients. We reserve
  • Next, wash the eggplant and zucchini. It is not necessary that the peles. In any case, we will have to cut them into thin sheets.
  • On the other hand, we will also wash the spinach. If they are frozen, we must thaw them and drain them well so that they eliminate all the water.
  • In another pan, with olive oil and salt to taste, fry the zucchini, eggplant and spinach. We reserve
  • Later, as in the previous case, we must prepare the lasagne plates according to the package instructions. Once ready, in a tray suitable for the oven, we will place a layer of plates.
  • Then, on this layer, we add part of the spinach mixture and cover with a second layer of lasagne plates.
  • Repeat the operation to obtain at least 3 layers of lasagna and 3 layers of vegetable filling (zucchini, eggplant and spinach).
  • Then, over the last layer of plates, pour the tomato sauce and add vegan cheese on top.
  • Finally, put the lasagna in the oven at 180 degrees for about 15 minutes, until golden brown.
