- 1 small zucchini
- 1 clove garlic

Preparation
- First of all, we boil the peas.
- Meanwhile, add in a bowl all the ingredients for the dough and knead very well. Then, cover with a paper of kitchen film and leave inside the refrigerator for half an hour.
- Next, we wash and cut all the vegetables into small pieces (except the peas) and add a good splash of olive oil, salt and pepper.
- Then, in a pan We sauté all the vegetables, adding the peas until they are browned and the liquids are absorbed.
- Then, we take the dough out of the fridge and divide it into eight parts. Each piece is kneaded and we make a fine circle.
- Subsequently, add a tablespoon of the vegetable filling in each circle and close the dough. For it, we should not fill the dough too much and we should close it well, tightening the edges with a fork. Otherwise, they will open and the filling will come out all over while baking.

Recipe 2 of vegan empanadas (spinach)
You must take special care when filling the dough, without overloading it to prevent it from opening during cooking.
Ingredients

- 2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon of sugar
- 1/2 cup of vegetable margarine
- 1 spoon of apple vinegar
- 1/3 cup of cold water

- Then, once these ingredients are well mixed in powder, add the margarine at room temperature and mix it with the flour.
- Then, add the vinegar and water little by little, kneading continuously.

- We cover it with kitchen paper and put it in the refrigerator for an hour.
For the filling:
- First, we wash and peel the vegetables.
- Then, finely chop the onion and garlic and the fry in a pan or pot with olive oil.
