- 500 grams of fresh cherries.

- Put the mixture in a saucepan and cook over high heat until it starts to boil. Then lower to a low heat and continue cooking for 1/2 hour. It is necessary to stir from time to time with a silicone spatula so that the sugar does not stick.
- Once this time has passed, mash the cherry jam. The final texture depends on the taste of each one. This can be completely smooth or leave some whole pieces of the fruit.
- To check that it is ready, put a little bit on a plate and pick it up with your fingers. If a thread forms between them when separating them, it is ready. Then, remove from heat and let cool.
- Although it may seem that the texture is liquid, with the passage of time it acquires a thicker consistency.
- To pack it safely it is necessary to use sterilized jars. This is done by immersing the containers in boiling water for 10 minutes. Afterwards it is necessary to keep warm until the moment of use.
