  • 3 kilos of yellow corn.
  • 6 liters of water.
  • 1 kilo of panela.
  • Cloves and cinnamon.
  • 1 shot of brandy.
  • Grated coconut.
  • Raisins.
  • 3 tablespoons of butter (45 g).
  • A pinch of salt.

Note: You must have containers of considerable size to prepare this recipe. It is usually made in large quantities, although if you prefer a more moderate size you can reduce the portion of the ingredients.

  • You have to start by cooking the corn, but it does not need to be excessively soft. Once cooked, let it rest and grind.
  • Then, it is incorporated into the water and strained, so that there is no grain left at the end. When the texture is very fine, it is brought back to the fire. At this moment, the panela, cinnamon, cloves, salt and butter are introduced.
  • It will be necessary to stir constantly until the dough thickens. From here, the coconut, raisins and brandy are incorporated. After a couple of minutes over medium heat, divide the mixture into molds and let it rest until cool.
  • After two hours it will be ready for consumption. It can be served accompanied by fritters, cream or some other type of pastry cream.

Another option to prepare corn custard

We are going to offer you another alternative to make corn custard, in this case using flour as the main ingredient. It is a simpler version, but that also achieves an excellent final result. For this you will need the following elements:

  • 200 grams of cornmeal.
  • 200 grams of scraped panela.
  • 500 milliliters of milk.
  • 1 cinnamon stick.
  • 3 cloves.
  • 50 grams of butter.
  • 1 liter of water.
  • Salt.


  • You have to start by scraping the panela and placing it in milk. Mixes well until almost completely dissolved.
  • Next, the flour with the cinnamon, the cloves and the water is introduced in another bowl. Stir everything and heat over medium heat for 20 minutes without stopping to stir to avoid sticking or burning.
  • After time, add the milk with panela and continue the cooking process for a few more minutes.
  • Now is the time to incorporate the butter, which will quickly be integrated into the preparation. It will only be necessary to wait another 30 minutes without stopping stirring to achieve a reduction that allows the dough to be inserted into a mold.
  • Let it cool and you can remove it from the mold and consume it.
Cinnamon and coconut are often added to the custard to give it a more intense and delicious flavor.
