Step by Step

You have to start by forming the preferment. To do this, the warm milk and yeast are mixed in a bowl, letting it dissolve little by little.

After a while, 130 grams of flour and 20 grams of sugar are added., mixing everything well with the help of a fork until a sticky but homogeneous result is obtained. The bowl is covered with plastic wrap and left to ferment for at least 1 hour.

Then, the preferment in another large container, where the whole eggs, the sugar, the salt, the flour, the water and the lemon and orange zest will also be incorporated. It mixes well, first with a wooden element and later with your hands, on a work surface. It is important not to grease or flour the table.

Mixing should last approximately 25 minutes to achieve an elastic result. At this point the butter cut into squares is incorporated, although little by little, continuing with the kneading. The result will be a dough with an elastic, non-sticky and shiny texture.

The next step is to make a ball and place it in a lightly floured bowl. Cover with a cloth and leave it to ferment for a couple of hours.

The optimum temperature for this is between 22 and 25 degrees Celsius. Time passed, the mass should have tripled the initial volume. You work a little more with your hands and add the grapes and fruits.

It only remains to place the result in a mold to Panettone and repeat the raising process for another 2 or 3 hours. To continue, a cross is made on top, placing 4 butter nuts to get a golden color on the surface.

The dough is put in the oven for 30 minutes at 180 degrees Celsius, although after 10 minutes it will have to be covered with aluminum foil. It only remains to place it on a rack and let it cool for 3 hours upside down.
