Carimañolas recipe: a preparation of the Colombian Caribbean

  • 1 clove of minced garlic.
  • 1/4 of red pepper.
  • 1/2 onion.
  • A chives.
  • Salt.
  • Pepper.
  • 1/2 teaspoon ground cumin.
  • 1 tablespoon of tomato paste.
  • 250 grams of minced beef.

Keep in mind that the ingredients of the filling can be substituted if you need it. It is possible to create a tuna interior or even a variety of vegetables. That will depend on the taste of each one. The key is to always choose fresh, top-quality ingredients.

Step by Step

  1. Place the yuca in a large pot with the salt and water so that everything is cooked. Raise the temperature of the liquid until it boils, then reduce the intensity by half. Let everything cook for 25 minutes. It is important that at the end the yuca is tender enough so that it can be worked with a fork.
  2. When the yuca is tender, the water is removed and cleaned well to remove the fibers from the center. With a grinder or a fork, mash the tuber well. Reserve for later.
  3. At the same time, heat oil in a large frying pan.
  4. Add the onions and bell pepper to the skillet, and cook until both ingredients are tender. This process will take about 3 minutes.
  5. Then add the garlic, chives, cumin, salt, and black pepper. Keep the preparation on the fire for 1 more minute, stirring every little time.
  6. Add the minced meat and cook until it is cooked enough inside. It could take around 7 minutes.
  7. At this point, mix everything with the tomato paste and continue cooking for a couple more minutes. Then let it cool off the heat.
  8. Divide the yuca mixture into 10 servings; fill each one of them with the meat and close it into a small slightly oval ball.
  9. Heat oil in a pot at 180 degrees Celsius and fry the carimañolas until golden brown. It is important that you turn them over when necessary. To finish, remove them and place them on absorbent paper. Top them with chili.
